Babybacks...

were what we had for dinner last night. They were a little high at nearly $8 for the slab, but that's what Hubby wanted for Father's Day dinner...so babybacks it was. He found three green peppers in the garden, so I used one of them in the potato package we cooked on the grill with the ribs.


I put sliced potatoes, onions, green pepper, mushrooms, a can of drained carrots and pats of butter on a sheet of tin foil. Season with your favorites, I just used salt and pepper and wrap up like an envelope.

They went on the grill with the ribs, which we also wrapped in foil after they had browned and cooked about 4 hours.


The ribs were falling off the bone tender and the veggies were very tasty. Hubby dry rubbed the ribs before cooking, and basted with his "concoction" of vinegar, Worcestershire sauce, and who knows what else. When he wrapped them to finish, he added a little of the basting sauce and sealed the foil package so that the steam couldn't escape. They turned out perfectly. I don't guess the $8 was such a bad deal...we couldn't have gone out and eaten for that, and it was better than anything we could have ordered.
